Hik 9 Restaurant

Golden A' Design Award Winner 2021

The spatial choreography of this restaurant interior operates as a sophisticated symbolic system wherein copper serves as the primary signifying material, carrying associations of alchemical transformation, culinary tradition, warmth, and craft heritage that extend far beyond mere aesthetic choice. Copper's historical role in cooking vessels across cultures positions it as an archetypal symbol of the hearth and the transformation of raw ingredients into sustenance, while its warm chromatic qualities invoke fire, solar energy, and the golden hour of gathering. The tessellated ceiling geometry references both the coffered ceilings of classical architecture, with their associations of elevated cultural space, and the cellular structures of natural organisms, suggesting organic growth patterns within ordered frameworks. The bovine skull mounted prominently functions as a potent multivalent symbol, evoking agricultural abundance, the sacrificial dimension of sustenance, and the frontier traditions of hospitality, while its curved horns echo the crescents of lunar symbolism associated with cycles of renewal. The crystalline geological formations emerging from mirrored bases introduce chthonic symbolism, bringing the raw materials of the earth into dialogue with refined culinary culture, suggesting that luxury dining remains connected to fundamental geological and natural processes. The open kitchen configuration carries symbolic weight as transparency, honesty, and the celebration of craft labor as performance worthy of observation, inverting historical patterns where kitchen work was hidden from view. White tablecloths function as ritual markers, establishing purified zones of consumption distinct from preparation spaces, their geometric precision suggesting order and ceremony. The wine display with its regular rhythm of circular forms suggests both abundance and temporal depth, as wine itself symbolizes transformation, patience, and the marriage of human craft with natural processes. The overall spatial narrative moves from raw geological foundation through refined craft to the transformative warmth of the hearth-ceiling above, encoding a complete symbolic journey from earth to fire.

This project is located in Shanghai. The restaurant has a dry-aging room made from Himalayan rock salt, an open food storage area, and a professional wine cellar for an intuitive view and selection of ingredients. Also, an open kitchen allows guests to enjoy the display of different cooking techniques, creating a healthy atmosphere of mutual trust, and creating a multi-functional dining space where people's feelings and the space style are fully expressed.
